Food for Thought: Chicken Risotto

For a foodie like me, each morning I wake and wonder what should I make for myself. There are times when I would just stand for a few minutes in front of the pantry or even in front of a wide opened fridge to figure what I would love to eat. It can be just for breakfast or brunch altogether but I am sure I have to eat something. Way back when I was a little girl I have been thought not to skip the very first meal of the day as it plays a big role in our development. I know it is true but I guess not much when it comes to growing literally by height. LOL. I kinda lack a bit on that department as I have stopped increasing my height at 5”1 and I honestly wish I have gotten a few more inches.

Anyway, today I have decided to take a bit of a break from my busy schedule and make something nice before I get back to work and bury my face behind my laptop screen. My pick for today is Chicken Risotto garnished with fresh onion chives on top. Nothing too grand but enough to satisfy my craving for a warm home cooked meal that is light but still filling. Looks very tasty right? To top that, it was definitely very easy to do. It’s just like shopping online… Even a 10 year old can make this dish. Since I don’t have pictures to make a recipe post I’ll just save that for another day. That way I can prepare a good snap that will serve as a nice guide / sample for newbie cooks out there like me.
